Authentic Scottish haggis is a type of pudding made from sheep’s heart, liver and lungs, encased in the animal’s stomach. The import of lung-based haggis from the UK has been banned in the 1970s in the United States, when the US Department of Agriculture ruled that “livestock lungs shall not be saved for use as human food.”
Americans who like haggis can nevertheless find lung-less haggis in the US, produced by several Scottish companies in compliance with the USDA regulation.
