These tiny and beautiful birds are considered one of the rarest delicacies of the gastronomic world, especially in French cuisine. But their hunting and consumption were banned in France in 1999, when the ortolan population dramatically declined.

In the United States, it is also illegal to import and eat these tiny birds, as part of a global effort to stop illegal hunting and trading.
