It’s got small amounts of essentials like vitamin C, calcium, and fiber, and some varieties (savoy and bok choy, specifically) are good sources of beta carotene, that all-important antioxidant that the body can convert to vitamin A and use to boost your immune system and protect against heart disease and cancer.
